Sherish is the name given to the Jerez region in the times of Al Ándalus, when the first stills also arrived in the area.
We were inspired by the wines of the land and the elements that make it possible to create an English-style gin, Navy Strength. A tribute to the memory of the “Sherry Case” where we learnt about the origins of the word that gives its name to the most prestigious wine region in the world.

In January 2021 we distilled SOUNDCASK Sherish for the first time, creating the Solera in an 8@ cask that previously contained Oloroso wine. We continued distilling to create the first criadera in a 4@ cask containing PX wine and finally we filled the second criadera in a 3@ cask containing Manzanilla wine.
Method; a single distillation in a discontinuous copper still with Palomino grape wine and juniper only.
Result; strong juniper flavour but rounded and floral due to barrel ageing. More like a perfume than a gin. Due to its concentration, it is highly recommended for cocktails in small doses, providing pure juniper and hints of Sherry.
Four sacas will be made each year on emblematic dates related to the Jerez region, resulting in 50 bottles per saca in 375ml format and with an alcohol content without reduction, around 59% vol.
Every night the barrel of Solera vibrates with the music of La Banda Morisca.
